For lunch, Hotel Le Toiny offers a delicious menu at the Beach Club, a hidden paradise on Toiny Bay. The menu rotates regularly and offers dishes based on fish, grilled meat and refreshing salads. Enjoy a truly relaxing feet in the sand lunch under sea grape trees or "Paillottes." The beach club opens daily at 11am and lunch service starts at 12pm.

Following the success of the Full Moon parties launched in 2019, Le Toiny Beach Club opens its door every Thursday night for a one-of-a-kind dining experience. Filled with music, lighting and fire shows, the Beach Extravaganza night is a unique chance to dine on the private beach of Le Toiny, one of the most iconic sites of Saint Barth. A la carte menu, limited availability, upon reservation only.

Following an apprenticeship at the Médéric hotel school, he quickly rose through the ranks and found himself at the well-known Jules Verne restaurant, restaurant of the Eiffel Tower in Paris. He then spent 2 and a half years at the Hilton, then opened the door of the Georges V in 2001 where he moved from the position of Commis to Chef de Partie in 3 years. His career exploded when, at just 25 years old, he became Chef of Pershing Hall. In 2009, he returned to Bristol where he had spent a few years earlier, but this time as Chef. It is thanks to his hard work, and under the direction of Eric Frechon, that Eric Desbordes won his first Michelin Star in 2013. It was in 2014 that he had desires to explore elsewhere and he decided to take on a new challenge with the Eden Rock Saint Barth by becoming “Executive Chef”, under the leadership of “three-starred” Chef Jean-Georges Vongerichten. Eric and his strong team spirit then flew to another heavenly destination – Bora Bora – to take over the lead of the kitchen at the Four Seasons. But he missed our beautiful Saint Barth too much so he couldn't help but answer the call from Atelier Joël Robuchon when the restaurant opened its doors. It was following this challenge that he chose to join Le Toiny family by taking charge of the hotel's two restaurants: the Beach Club and the gourmet restaurant as the Executive Chef. Le Toiny is proud to be represented by such a prestigious Chef who knows that the best cook is the one who knows how to challenge himself every day with the sole aim of amaze every palate.
